General Information: Each meal Steph prepares is created in our Health Department inspected kitchen, using only the best ingredients. Steph does not use “imitation” anything. Each meal is hand-prepared and cooked to perfection; you can always expect much better than the ordinary restaurant meal, delivered hot and fresh to your meeting or event. Everything we serve is really good!

MEATS
Deep-Fried Turkey Breast: Tender and moist, injected with one of several tasty blends of Creole spices and carved on site to preserve texture and flavor.
Smoked Barbeque Chicken Quarters: Professionally smoked in our own Southern Pride smoker, basted and served with Steph’s own special barbeque sauce.
Smoked Beef Brisket: also smoked in our large Southern Pride smoker, this beef brisket is cooked Texas style, tender and moist, with the taste only genuine mesquite wood can impart.
Chicken ‘n Dumplings: real Southern style Chicken ‘n Dumplings, simmered in a rich broth with old-fashioned, down home good taste. You won’t have to stir it around to find a piece of chicken!
“Smokey Mountain” Chicken Breast: marinated and grilled, stacked with barbeque sauce, ham, bacon, grilled onions and Provolone cheese.
Creamy Chicken Cordon Bleu: tasty chunks of boneless chicken and slivered ham (this item can also be prepared without ham) baked in a 2 cheese creamy wine sauce served over egg noodles, topped with spicy croutons.
Parmesan Chicken: Skinless bone-in chicken breasts, sautéed and baked in a fresh mushroom creamy Burgundy wine sauce.
Chicken Ka-Bobs: 6 ounces of chicken tenders, marinated in our own exclusive sauce, grilled with a combination of vegetables.
Beef Ka-Bobs: the same as the chicken Ka-Bobs except made with beef tenderloin.
Pork Ka-Bobs: again, like the Chicken Ka-Bobs except prepared with pork tenderloin.
Prime Rib: Roasted or smoked according to your preference, with usually a rosemary, garlic and cracked peppercorn rub. This item can be cooked with a number of different dry rubs according to your desires.
Taco Bar: Hard and soft shell Tacos, with seasoned ground beef and grilled chicken (which has been marinated in tequila lime marinade). Served with all the usual condiments.
“State Fair” Sausages with a Twist: Kielbasa and flavored chicken sausages, served with roasted peppers, mushrooms and onions on a bun with a cheese sauce.
Lasagna: Made with ground beef and Italian sausage, with 3 chesses, and homemade tomato sauce. Variations on the meat Lasagna include roasted peppers, mushrooms (Portobello and Shiitake), and spinach. We also serve an all vegetarian lasagna.
Pork Barbeque: available as shoulders or a whole hog, slow roasted and smoked to perfection, for a real old-fashioned pig pickin’ or sliced or chopped barbeque. Served with Steph’s own special homemade barbeque sauce. (For those that don’t eat pork, we can provide pulled chicken barbeque.)
Baked Ham: served with or without grilled pineapple.
Grilled Pork Tenderloins: cooked just right with a variety of marinades and rubs, usually served with roasted vegetables.
Hot Dog/Hamburger Cookout: Ballgame fresh and delicious, cooked on site on our large commercial grill, using 6 ounces of hand-formed ground beef. Veggie burgers and Portobello mushroom burgers available for vegetarians.
Blackened Chicken Salad (very possibly the best salad you will ever eat!): 4 ounces of blackened chicken on bed of mixed lettuces, with cheese, cucumbers, purple onions, tomatoes, and blackened pecans with homemade parmesan cracked peppercorn ranch dressing.
Grilled Chicken Caesar Salad
Chicken Salad: the best homemade chicken salad.
Sandwiches: All types, with different breads, cheeses and meats. The standard is ¼ lb. of meat on prepared sandwiches. You may request “Make your own sandwiches.”
Coming in the future: Barbequed Meatloaf and Pot Roast on a stick.
SALADS
Tossed Salad: a variety of lettuces served salad bar style with tomatoes, purple onions, cheese, cucumbers and always a good selection of favorite dressings.
Roasted Pear Salad: Real roasted pears on a bed of a variety of lettuces with bleu cheese crumbles, sugared walnuts, and purple onions. A special vinaigrette dressing goes with this salad. This salad can also be served with bacon wrapped pears.
Raspberry-Strawberry-Spinach Salad: This special salad is served with parmesan curls or wafers, sugared almonds, and purple onions. This is best served with a raspberry vinaigrette dressing. This salad is dependent on what is available locally at the time of the request.

Broccoli Salad: Oh, wow! Nobody does it better! I bet you can’t guess what is in the dressing (and I wouldn’t tell you if you did!) but I will tell you it has bite-size pieces of sliced broccoli, raisins, purple onions, bacon and sunflower seed kernels.
Baby Bleu Salad: a wedge of iceberg lettuce, drizzled with homemade bleu cheese dressing, sprinkled with bacon, onions and diced tomatoes.
Cranberry Congealed Salad: contains oranges, apples, fresh cranberries and pecans in cranberry/raspberry gelatin.
Fresh Sliced Tomatoes with Mozzarella cheese and dressing
VEGETABLES
Roasted Corn on the Cob
Green (String) Beans: Seasoned with onions and with or without ham.
Baked Potato: with all your favorite condiments.
Baked Sweet Potato: with butter and cinnamon sugar.
