Purpose of the Job:In liaison with the Catering Manager, provide a high quality, professional and responsive catering service at Robert Clack School.Manage and lead on food preparation, cooking, cleaning the school kitchen and dining room areas, and food service to pupils and staff.In liaison with the Catering Manager, supervise the Assistant Cook and the Food Service Assistants.To ensure that the school kitchen meets all service and operational related standards in compliance with all service related regulations and legislation e.g. Health & Safety, Hygiene, Food Safety/Safer Food -Better Business, Operations Manuals and Kitchen Records.2. Main Activities (under direction of the Catering Manager): Food Service and StandardsAssist the Catering Manager with weekly menu planning, ensuring that there is a variety in order to meet specific dietary and cultural requirements. Lead on the preparation of food using a range of kitchen equipment and tools.Lead on the assembly, production, cooking and storage of food. Where appropriate ensure that food products are prepared ready for transportation.Undertake food service duties before school, during break time and lunchtime to pupils and staff. Ensure that there is adequate kitchen staff cover. When serving food, ensure that it is accurately portioned and accounted for. Ensure that all kitchen staff adhere to this.Ensure that food served is registered with the correct pupil/staff member using the cashless till system.Ensure that kitchen staff replenish and maintain all drinks and goods’ counters, when necessary.Able to advise all service users of the menu items that are available and provide information relating to them i.e. how they are produced, the main ingredients and basic product knowledge. Ensure that all kitchen staff are aware of this information. In accordance with Safer Food, Better Business (Food Standards Agency) legislation, lead and manage the routine cleaning of all kitchen equipment, utensils and work surfaces.Ensure that kitchen staff clear and clean the kitchen and dining hall area to the required standards, before and after food service.Monitor food hygiene and health and safety standards, and ensure that daily, weekly and termly cleaning schedules take place. Responsible for ensuring that tables and chairs, counters, cutlery etc. are set out when required, and cleared away and cleaned once used / when not in use.StaffEnsure that the kitchen staff work together as part of a team to contribute to the smooth daily operation of the catering service.In liaison with the Catering Manager, assess and adjust levels of staffing in accordance with the requirements of the catering service. Plan and prepare staff task lists and rotas, as required, and in liaison with the Catering Manager.Sign timesheets, when necessary. In liaison with the Catering Manager, monitor kitchen staff performance and conduct. Where appropriate, assist with support and additional training.Responsible for the induction and training of new staff joining the kitchen. OtherPlace food / supply orders, in liaison with the Catering Manager.Check delivery notes against orders to ensure they are correct.Undertake regular stock checks, maintaining food stock levels and checking dates.3. Statutory Requirements:This post carries a requirement to have a Disclosure and Barring (DBS) check for Children. 4. General Accountabilities and Responsibilities:Comply at all times with Council and School’s policies and procedures, particularly those regarding Data Protection, Equalities and Diversity, Health & Safety and Safeguarding.Undertake a proactive, committed approach towards the School’s values and ply with the competencies and standard requisites agreed by the School as relevant to your post.Participate in training and development activities, as and when required, as part of the school’s Performance Management process.The above mentioned duties are neither exclusive nor exhaustive and the post holder may be called upon to carry out such other appropriate duties as may be required by the Catering Manager/Line Manager, within the grading level of the post and the competence of the post holder. ................
