In SharePoint, on left side navigation pane, select your Documents library.

At the top-center options ribbon, select the Sync button. Once the box comes up, select the Sync now link.

When the pop-up appears in your browser window, select Open Microsoft OneDrive.

A notification box at the bottom right will appear briefly to let you know you're syncing. In File Explorer, you'll see the University of Northern Colorado with the little blue building icon, and under that you will see your SharePoint Documents library (folder) that you are now syncing.

Use this folder as you normally would any other folder or file on your computer or OneDrive. If you want to stop syncing, select the little blue cloud OneDrive icon at the bottom right of your desktop task bar.

At the bottom of the OneDrive pop-up window, select Help & Settings, then Settings.

Under the Account tab, you'll see your Sync Locations. Select Stop sync next to the Documents library you want to stop syncing.

When Windows asks if you want to stop syncing, select Stop Sync. The folders will be removed over time, however if not you are safe to delete them from your library on your local computer. Here is a link to show what the status icons mean:
