Food & Beverage ManagerDescription of WorkThe Food & Beverage Manager plans menus & specials, organizes schedules, supervises staff (cooks, bartenders, servers & dishwashers) and performs work in the operation and the maintenance of the restaurant. They are responsible for breakfast, lunch, dinner & catering preparation & cooking. This position requires computer skills in Excel, Word and POS systems. They must solicit and receive customer feedback and utilize to develop corrective actions to improve food & service. He/she serves as the final escalation point for all customer satisfaction and employee issues in the restaurant. They must be able to work independently and with little oversight to establish overall restaurant menu, service, catering & event direction.Work Duties:Develop and maintain a menuPlan the purchase, storage and safety of all food and restaurant suppliesEnsure restaurant and kitchen is cleaned on a daily basis and is a safe environment for both customers and employeesProcess both direct feedback and feedback via social media from customers. Use this feedback to set direction for the restaurantServe as a contact point for all special events and private parties and directs teams to deliver food and service at these eventsDirect and oversee all catering functions and manage a catering businessResponsible for scheduling maintenance of all kitchen equipmentOrganize all Food & Beverage invoices for paymentManage the selection, training and hiring of staff of approximately 15 servers, bartenders, cooks & dishwashersEstablish marketing strategy and plans that balances golf traffic and off-the-street restaurant trafficEnsure that all employees maintain health and safety standardsPlan and conduct regular staff meetingsManage a P&L and develop corrective action plans as needed to ensure profitabilityMonitor compliance with health and fire regulations regarding food preparation and serving, and building maintenanceManage Cost of Goods Sold - Estimate food, liquor, wine and other beverage consumption in order to anticipate amounts to be purchased or requisitionedReview work procedures and operational problems in order to determine ways to improve service, performance, and/or safetyReview menus and analyze recipes in order to determine labor and overhead cost and calculate price to achieve target marginQualificationsOrganizational capability and leadership qualitiesAbility to define staffing capabilities, write job descriptions and interview/fill open positionsMust manage employee performance and develop and monitor employee corrective action plansMust possess managerial skills and be able to manage a team of approximately 15 peopleRequires excellent oral and written communication skillsExcellent customer service skills requiredMust be able to multi-task and prioritize several tasks Ability to assist in establishing and executing branding and marketing plansMust have excellent people and communication skillsAbility to accept customer feedback (positive and negative) and develop action plans related to this feedbackMust be able to work with other entities and organizations and departments5+ years restaurant supervisory experienceAbility to work as part of a cross-departmental leadership teamSpecial RequirementsMust currently possess a valid driver’s license.
