A RECIPE FOR SODA SCONES

Warm, buttered scones, spread with homemade jam and topped with whipped or clotted cream, are everyone’s idea of an English cream tea.

Ingredients:

225g. plain flour

5ml. bicarbonate of soda

5ml. cream of tartar

25g. butter

150ml . milk

2.5ml. lemon juice

OR 1 pot natural yoghurt plus milk to make 150ml.

Method:

Sift the flour with the bicarbonate of soda and cream of tartar in a mixing bowl. Rub in the butter. Make a well in the mixture and pour in the milk and lemon juice (or yoghurt), mixing quickly to a soft dough with a palette knife.

Turn the dough onto a floured board and knead lightly until smooth.

Roll out until about 1.75cm thick.

Cut out 12 rounds with a 5cm. pastry cutter.

Leave to stand for 15 minutes before baking.

Put the rounds on a heated greased baking sheet and bake in the oven at 220°C for 10 minutes or until the scones are well-risen and golden.

Transfer to a wire rack to cool. Serve freshly made.
