Not bad for these fuzzy little brown things, huh? Next time you want to consume your daily dose of Vitamin C and build up your immune system and skin collagen, try kiwifruit. These sweet-tangy fruits taste like a combination of melon and strawberries and are best eaten when ripened. If you want more fiber you can eat the skin on the outside and add 5 grams of fiber to the juicy 4 grams already inside the fruit. Of course, be sure to wash the skin well to remove any dirt and or pesticides. Kiwi Tangerine SalsaThis is a perfect dip to eat with whole grain tortilla chips, or enjoy it over fish, chicken or pork. The sweet and spicy combination takes advantage of in-season tangerines and kiwis - making this the perfect late-Winter early-Spring snack! Total prep time: 20 minutes. Makes about 2? cups.The fresh stuff you need:3-4 kiwis, peeled and diced4 small or 2 medium tangerines, peeled and diced1 cup peeled and diced jicama (hee-ka-ma)? cup diced red bell pepper? cup chopped cilantro2 tablespoons lime juice1 tablespoon vegetable oil1 small jalapeno pepper, seeds and ribs removed, diced? teaspoon saltWhat to do with the stuff:In a medium bowl, combine all the ingredients. Spring can mean many things for different people. For me, Spring means more sunshine, warmer weather and lighter meals. A salad full of veggies and protein can be a great “no cook” meal. Let’s free up our time in the kitchen so we can spend more time outside.Happy Spring!Directions:Boil 1 cup water in a saucepan. Add the lentils. Cook for 15 minutes over low heat until tender, drain. While the lentils are cooking, cook the peas in another pan for about 3 minutes. Rinse and drain. Wash, peel and shred (or chop) carrots.In a large bowl, combine cooked lentils, potatoes, peas, and carrots. In a small bowl, combine parsley, vinegar, mustard and oil. Stir well.Pour dressing over the lentil vegetable salad. Enjoy!Refrigerate leftovers.
