Have you ever said to yourself on Monday nights, “Oh, our Farm Fresh Ventures box comes again tomorrow and we still haven’t finished eating everything from last week? If that has happened to you, then you are not alone. Sometimes there is so much in the box that you can’t eat everything before the next week rolls around. Don’t despair. And definitely don’t throw anything away. Here are some suggestions to utilize everything in your box:

• Access what is in your box when you first get it home. Think about what you might be able to eat in a week’s time. Give the rest to a friend or neighbor as soon as you can so they can enjoy it at its freshest, too.

• If there are items you don’t think you will eat within the week, try to freeze them on Tuesday night or Wednesday morning to capture them at their freshest. A great website for information about how to freeze fruits and vegetables is . This site gives current guidelines, not only for freezing, but for home canning and dehydrating, too.

• Cook all of an item to eat for a meal but freeze what is left instead of

putting the leftovers back in the refrigerator. That way you can prepare and eat another fresh item from the box. Later, you can use the frozen leftovers when the Farm Fresh Ventures season is over.

• Be creative with what is in the box. Can you prepare something that uses

several of the items in one recipe? Maybe a tasty vegetable soup or

vegetable chili, or a mixture of roasted vegetables, for example. All are good ways to use up what is in your box without wasting a thing.

Fresh Peach Salsa

Ingredients

• 1 ½ cups ripe peaches, diced (4-6 depending on size)

• 1 cup tomato, diced (about 2 medium)

• 1 tablespoon jalapeno, finely minced (about 1/2)*

• ¼ cup green bell pepper, diced (may substitute yellow or red bell pepper

• ¼ cup red onion, finely diced

• 1 tablespoon cilantro, chopped

• Juice of 1 lime

• ¼ teaspoon chili powder

• 1 tablespoon brown sugar, packed

• Salt and pepper to taste

*(May add more jalapeno pepper, to taste)

Directions

Mix all ingredients together well. Serve immediately, or cover and refrigerate until ready to serve. Good on crackers or as a dip OR as a condiment with chicken, fish or beef.

Vegetable Chili

Ingredients

2 garlic cloves, minced 1 large red or green pepper, chopped

½ pound mushrooms, sliced ½ cup chopped onion

2 tablespoons oil 1 can (28 ounces) crushed tomatoes with added puree*

1 can (15 ounces) tomato sauce* 1-2 tablespoons chili powder

1 teaspoon ground cumin (optional) 2 cans (15 ounces) kidney beans, drained and rinsed

1 ½ cups diced zucchini 2 cups fresh or frozen corn kernels (or one 16 oz. can of corn,

1 ½ cups shredded sharp cheddar cheese drained)

Directions

Cook the garlic, peppers, mushrooms and onions in oil for five minutes or until tender. Add the tomato sauce, chili powder and cumin and heat to a boil. Reduce heat to low. Add kidney beans, zucchini, corn and half of the cheese. Simmer 25 minutes. Use the rest of the cheese as a garnish when serving.

Hint: You may want to sauté the garlic, peppers, mushrooms and onions, first, then add all ingredients to a slow cooker. Put on a low setting for a couple of hours or until zucchini is tender.

*May substitute 2 pounds peeled and chopped fresh tomatoes for the canned crushed tomatoes/puree and 2 cups homemade tomato sauce for the canned tomato sauce, if desired.

Triple L Farms

Triple L Farms is a fifth generation family farm located in the Sandhills of North Carolina in a small community called Derby in Richmond County. Derby was named for Roger Derby who was one of the pioneer peach growers in North Carolina. Derby is called “the middle of nowhere” by many people, but we call it “the garden spot of the world”. Our mission is to keep the family farm alive and to share its products with others. The farm is currently owned and operated by brothers Jim and Joe Lambeth. Jim and Joe both graduated from NC State University in 1974. After graduation Joe returned to the farm to help his father, Mike, run the family business. The next year Jim also returned to the farm after spending a year working in the forestry industry. Today Jim and Joe are assisted on the farm by Jim’s middle child, Jed, full time and by his eldest child, Jamie, part time. Jim’s daughter, Meghann, occasionally helps out on the farm as well. Jim’s wife, Marcia, can also be seen many days helping out around the produce stand.

This week marks the beginning of the second half of the season. With it comes a slightly different look to the newsletter. Previously the newsletter had been produced in Stanly County. For the remainder of the 2014 season it will be compiled and written in Union County. The newsletter will continue to provide you with important information about “What’s In Your Box”, as well as tasty recipes, farmer highlights, upcoming classes and other helpful tips for preparing this season’s bounty.

Although we have just 8 more weeks to go, it is not too late to receive a weekly box. Farm Fresh Ventures continues to take subscriptions throughout the season.
