Bring to boiling; (I usually bring to boil very slowly and stir every 15 minutes) reduce heat. Cover and simmer until the beans are tender, about 1 1/2 to 2 hours. Test the beans for doneness my mashing with a fork. A fully cooked bean will mash easily with light pressure. One pound of dry beans (2 1/2 cups) will yield 6 to 7 cups of cooked beans. ................
