Pancakes with walnut yoghurt & honey

11 ProPoints values per serve | Serves: 4 Prep: 20 mins plus 10 mins standing | Cooking: 20 mins

11/3 cups (200g) self-raising flour 1 tbs caster sugar 2 eggs, lightly beaten 11/3 cups (330ml) skim milk 2 tsp vanilla extract ? cup (60g) Weight Watchers Sour Cream 150g tub Nestl? Soleil Vanilla Flavoured Yoghurt 1/3 cup (35g) walnuts, chopped 12 (65g) Weight Watchers Halved Apricots,

drained, cut into wedges 1 tbs honey, warmed

1 Sift flour into a medium bowl and stir in sugar. Whisk eggs, milk and vanilla in a jug until combined. Make a well in the centre of flour mixture. Add egg mixture and whisk until smooth and combined. Set batter aside for 10 minutes.

2 Place Weight Watchers Sour Cream and Nestl? Soleil Vanilla Flavoured Yoghurt in a medium bowl and beat until smooth and combined. Stir in three-quarters of the walnuts.

3 Lightly spray a large non-stick frying pan with oil and heat over medium heat. Spoon 1/3 cup (80ml) batter into pan. Cook for 1?2 minutes or until bubbles rise to the surface. Turn and cook for 1?2 minutes or until pancake is lightly browned. Transfer to a plate and cover to keep warm.

4 Repeat with remaining batter to make 8 pancakes. Top pancakes with Weight Watchers Halved Apricots, walnut yoghurt and remaining walnuts. Serve drizzled with honey.

Rhubarb & raspberry nut crumbles

3 rhubarb stalks (325g), thinly sliced 2 tbs caster sugar

150g frozen raspberries 2 tsp cornflour ? cup (105g) plain flour 2 tbs brown sugar ? cup (60g) Weight Watchers Canola Spread 2 x 34g Weight Watchers Nut Deluxe Bar, finely chopped

1 Preheat oven to 180?C or 160?C fan-forced. Lightly spray four 1-cup (250ml) ovenproof dishes with oil. Place on a baking tray.

2 Combine rhubarb, caster sugar and 2 tablespoons water in a medium saucepan over medium heat. Cook, covered, stirring occasionally, for 4?5 minutes or until rhubarb is tender. Remove from heat. Toss frozen raspberries and cornflour in a medium bowl. Stir raspberries into rhubarb mixture. Spoon into prepared dishes.

3 Combine plain flour and brown sugar in a bowl. Using fingertips, rub in Weight Watchers Canola Spread until mixture resembles breadcrumbs. Stir in Weight Watchers Nut Deluxe Bar. Spoon crumble mixture over rhubarb mixture in dishes. Bake for 20 minutes or until crumble is golden. Serve.

SERVE WITH: Weight Watchers Creamy Vanilla Ice Cream. Add 2 ProPoints values per serve for a small (50g) scoop.

Creamy leek & spinach soup

2 tsp Weight Watchers Canola Spread

1 medium leek, thinly sliced

2 garlic cloves, crushed

2 large potatoes, chopped

3 cups (750ml) chicken stock

1 bunch (600g) English spinach, coarsely chopped

(see note)

1 cup (250ml) evaporated skim milk 1 tbs Weight Watchers Sour Cream

1 Heat Weight Watchers Canola Spread in a large saucepan over

2 Add potato, stock and 1? cups (375ml) water. Bring to the boil. Reduce heat and simmer, covered, for 15 minutes or until potato is tender. Cool for 10 minutes. Add spinach. Cool for 5 minutes.

3 Using a stick blender or food processor, puree soup until smooth. Return soup to low heat and add milk. Stir for 2?3 minutes or until heated through. Season with salt and freshly ground black pepper. Serve each with 1 teaspoon Weight Watchers Sour Cream.

NOTE: You can use 300g baby spinach leaves or 350g frozen spinach instead of a bunch of English spinach.

125g Weight Watchers Bacon, thinly sliced

? cup (75g) 97% fat-free semi-dried

tomatoes, chopped 2 tbs basil pesto 1/3 cup (40g) Bega So Extra Light

Tasty Grated Cheese 6 eggs

Try with a glass of All Hallow's Eve

? cup (125ml) skim milk

2 tbs pine nuts

1 Preheat oven to 180?C or 160?C fan-forced. Lightly spray a 20cm round cake tin with oil. Line base with baking paper.

2 Cook pasta in a large saucepan of boiling salted water, following packet instructions, or until just tender. Drain.

3 Meanwhile, lightly spray a large non-stick frying pan with oil and heat over high heat. Add Weight Watchers Bacon and cook, stirring, for 4?5 minutes or until crisp. Drain on paper towels. Combine pasta, Weight Watchers Bacon, tomatoes, pesto and half the Bega So Extra Light Tasty Grated Cheese in a large bowl. Place mixture in prepared tin.

4 Whisk eggs and milk in a medium bowl until combined. Season with salt and freshly ground black pepper. Pour egg mixture into tin and sprinkle with pine nuts and remaining Bega So Extra Light Tasty Grated Cheese. Bake for 25?30 minutes or until set. Stand for 5 minutes before turning out onto a serving plate. Cut into wedges. Serve.

NZ MEMBERS: You can use 97% fat-free bacon instead of Weight Watchers Bacon and 50% reduced-fat grated tasty cheese instead of Bega So Extra Light Tasty Grated Cheese. The ProPoints values remain the same.
