SOUP RECIPES

AUTUMN SOUP

1 pound ground beef

1 cup chopped onion

4 cups hot water

1 cup each—cut up carrots, celery, potatoes

2 teaspoons salt

½ teaspoon pepper

1 bay leaf

pinch basil

1—28 ounce can whole tomatoes

Brown ground beef. Drain fat. Add onions: cook 5 minutes more. Add water, carrots, celery, potatoes, tomatoes, and seasoning. Mix thoroughly. Bring to boil, cover, simmer 30 minutes or until vegetables are tender.

MEATBALL SOUP

1 pound ground beef

½ cup cracker crumbs

1 egg, beaten

2 tablespoons milk

1 teaspoon instant minced onion

½ teaspoon salt

¼ teaspoon pepper

¼ cup vegetable oil

#1 can stewed tomatoes

1 8—ounce can tomato sauce

1 cup water

1 envelope onion soup mix

1 tablespoon sugar

1 8—ounce mixed vegetables

Combine meat, crumbs, egg, milk, onion, salt, and pepper. Mix well; shape into meatballs. Brown in oil, drain. In large saucepan combine tomatoes, tomato sauce, water, soup, and sugar. Add vegetables and meatballs. Bring to boil, reduce heat and simmer covered 15 minutes.

WORLD’S GREATEST VEGETABLE SOUP

3 cups water

2 large carrots (cut in 1 inch slices)

1 small onion (chopped course)

1—10 inch celery stalk

¼ teaspoon salt

½ package Knorr’s vegetable soup mix

½ package onion soup mix

1—8 ounce can V-8 juice

¼ medium green pepper (chopped fine)

1 small chunk raw cabbage (cut coarse)

½ teaspoon dried parsley

1 beef bouillon cube

1 ounce uncooked extra-fine cut noodles

In large covered pot, bring water and V-8 to a boil. Add carrots, green pepper, onion, cabbage, celery, and reduce heat to simmer. Stir frequently with wooden spoon. After two hours add all the rest of the ingredients except the noodles and simmer for 30 minutes. Add noodles and cook 10 more minutes.

STRAWBERRY FRUIT SOUP

2—10 ounce packages frozen strawberries, thawed

1 pint fresh strawberries, hulled and washed

½ cup sour cream

¼ cup lemon juice

1-2 teaspoons cinnamon

1 cup heavy cream

strawberry slices for garnish

whipped cream for garnish

Blend all ingredients in a food processor or blender. Chill 3 hours. Garnish with a strawberry slice on a dollop of whipped cream.

WHITE CHILI

1 pound dry navy beans or 3 cans navy beans

3 cans chicken broth

1 onion, chopped

1 tablespoon ground white pepper

2 cloves garlic, chopped

1 teaspoon oregano

1 teaspoon cumin

1 teaspoon salt

5 cups shredded cooked chicken

2—4 ounce cans chopped green chilies

Wash beans and soak overnight/or drain canned beans. Stir beans into chicken broth. Add chicken, white pepper, garlic, oregano, cumin, and salt. Boil for 5 minutes. Reduce heat and simmer for one hour. Add chilies. Cover and simmer for additional 20 minutes.

Serve with tortilla in bottom of soup bowl. Add soup. Add cheese and sour cream to top of soup.

BAKED POTATO SOUP

1/2 stick butter, melted

2 cups diced onion

1/4 cup flour

4 cups chicken stock

1 ½ cups instant mashed potatoes

2 cups half and half

1 teaspoons salt

1 teaspoons basil

½ teaspoon Tabasco sauce

3 large red skin potatoes, cooked and diced

Saute onion in butter; add flour to onions and cook for 5 minutes, stirring often. In a large pot, put chicken stock and instant potatoes. Add onion and flour mixture; keep stirring and cook 25 minutes on medium heat. Add half and half, seasonings, and potatoes; cook 15 minutes, stirring often.

Top with any of the following toppings: grated cheese, crumbed crisp bacon, chopped green onions, Tabasco sauce.

TURKEY CHILI

1 pound ground turkey or chicken

1 small onion, chopped

½ green pepper, chopped

1—28 ounce can chopped tomatoes (or 3—16 ounce chili flavored tomatoes)

1 can kidney beans with juice

V-8 (add a little if you like thick chili, more if you like it thinner)

Chili powder to taste

Salt and pepper to taste

Brown turkey and onion on medium heat. Drain. In large saucepan, add turkey and remaining ingredients. Bring to a boil; simmer for at least one hour. May serve with shredded Cheddar cheese and/or sour cream.
