Popcorn
I have found popcorn to be a very good and enjoyable snack during the Daniel Diet. I have a new whirly-pop popcorn cooker that cooks popcorn with only 1 teaspoon of oil. I use olive oil. The popcorn is fantastic! It's much better than corn cooked in an air popper. I've also tried some packaged cooked popcorn called 'Organic Popcorn' that is lightly salted. You can buy this at Tom Thumb grocery stores, and it's delicious. I've read a lot about popcorn being one of the most toxic items people eat, due to the pesticides and sprays put on the corn before harvesting. Go organic for your health!
Cantaloupe Tonight Melon Smoothie
I came across this recipe from the Vegan Planet Cookbook called Cantaloupe Tonight Melon Smoothie. I was looking for something to have as a fruit snack, or eat for breakfast. My teenage son loves smoothies, and when you restrict dairy, it's hard to find something that will satisfy you, unless you use soy milk. Here's what's in the recipe:
• 1/2 medium-size cantaloupe, seeded and cut from the rind.
• 1/2 cup orange juice
• Juice of 2 limes (taste before you add all the juice at once)
• 1 medium-size, banana, peeled and cut into chunks
• Fresh mint leaves for garnish (optional)
• our addition: 2 cups of ice cubes - makes it like a frozen ice drink.
Mix all in a blender, and serve. Serves 2
Mrs. Jones' Brown Rice Dinner
This recipe follows the Daniel Fast guidelines and is filling and delicious! This is my original creation... if someone else has already "cooked" it up it is merely a coincidence.
• 1 cup of Brown Rice
• 2.5 cups water
Bring to rolling boil, reduce heat and simmer/steam for 45 minutes.
Half way through the cooking time, add:
• 1/2 cup of fresh salsa
• 1 cup of frozen corn
• 1/2 of a chopped red bell pepper
• 3/4 cup of cooked black beans
• a pinch of pepper to taste
Stir and replace cover for remainder of cooking time. Serve with fresh sliced avocado.
Salad
• 3 cups bite-size pieces fresh spinach
• 1/2 cup sliced strawberries
• 1/2 cup cubed cantaloupe
• Optional 1/2 cup sliced oranges
• 2 medium green onions, sliced(2 tablespoons)
In a tightly covered container, shake all dressing ingredients. In large bowl, toss all salad ingredients with dressing.
Strawberry-Melon Spinach Salad Dressing:
• 1 tablespoon orange juice
• 1 tablespoon honey (if you are allowing honey)
• 1 1/2 teaspoon olive oil
Great snacks:
Celery with Organic peanut butter - (Raley's you can grind your own) Top it with Raisins
Apple sauce (Motts brand - Natural - No sugar added)
Nuts & Raisins (I usually keep cashews & raisin mixture with me)
Fruits & Veggies cut up
Brown rice with homemade salsa and avocado. (This is one of my favorites.)
Salsa recipe:
(I make a lot so I can use it on other things)
Red tomatoes
White onions
Celery
Jalapeño peppers (1 large or 2 small)
Cilantro - 4 sprigs are plenty
Garlic - 1 spoonful
Chop onions and celery and put into a large bowl, set aside. In a sauce pan bring water to a boil, add tomatoes and jalapeno peppers. Continue boiling till skin is easy to peel off of tomatoes. Peel and put into chopper/blender. Cut the tops off the jalapeno peppers and add with the tomatoes. Blend. I like to leave it chunky. If it is too spicy add tomatoes, if not spicy enough add jalapeños. When I am not fasting I add salt.
Cook brown rice (takes about 1 hour) spoon salsa over the top and garnish with a fresh avocado.
Red Potatoes: (This is another one of my favorites)
Red Potatoes
Bell pepper mixture (red, yellow, green and white onions) you can get this in the frozen foods Dept.
Olive Oil
Garlic
Herb De Provedence (Island Spice Brand is best)
I like to boil my potatoes till they are just about soft, drain. Put into a large bowl, add bell peppers and onions then oil and spice mixture, put on a cookie sheet and bake till they are a little crispy or to your desired taste.
Split Pea Soup:
1 bag of split peas
White onion
Celery
Pepper
There is a recipe on the back of the bag of Pea’s, just leave out the meat and salt.
Oatmeal:
Cook oatmeal as directed add frozen blueberries, strawberries, bananas, raisins etc….
Vegetable Soup:
Natural Vegetable Broth (from Raley's).
Add any vegetable combination you like
Salads:
Green salad - any combination
Fruit salad - any combination
Vegetable - Tomato, Avocado Raisin and Red Potato (steam the potato) top with cashews
Squash - Crook Neck and Zucchini
Crook neck squash - yellow
Zucchini - Green
Rosemary & Tyme spice or Spike
Spike - it is a spice you can get at Raley's in the natural health department. This is very good to have on hand during your fast. You can use this in place of salt.
Olive Oil - just a little
Cut and steam till desired tenderness. Mix Olive oil and spices pour over vegetables.
Steamed Vegetables:
Broccoli, Carrots & Red Potatoes in the steamer is wonderful. It takes on a sweet taste. Remember that Carrots take longer to cook, so add your Potatoes after your carrots get a bit soft and then add your broccoli just shortly before everything else is ready.
Sweet Potatoes / Yams:
Garnet yams
Wash, put a few holes in it, wrap with foil and bake it for appox. 1 hour.
OR
*You can parboil yams, remove skins. Mash yams in a baking dish and bake for 20 minutes
Smoothies:
Orange Juice - Odwalla @ Costco is all natural and the cheapest.
Apple Juice
Frozen fruits (blueberries are a wonderful source of Vitamin B - You need)
Bananas
I use natural orange juice and apple juice as a base this time of year. In the summer I juice my one fruits and vegetables.
