Ginger Stir Fry Chicken w/ Steamed RiceBy: Wendy Darling-GoodInspired by a health food magazine from 2002Stir Fry Ingredients:2 tablespoons of low sugar ketchup1 tablespoon of fresh chopped ginger root (extra if wanted)4 – 6 tablespoons of reduced sodium soy sauce (extra for the table)3 – 4 cloves of fresh chopped garlic2 lbs of cubed chicken breast (slice then cube into bite size pieces)2 1/2 large green & red bell peppers roughly chopped (any color is good)2 – 3 Celery stalks chopped8 – 10 of the whole green onion sliced 2 – 3 tablespoons of canola oil, divided2 tablespoons of sesame oil, divided Pepper onlyRice Ingredients:1 cup of brown rice 2 cups of chicken stock & 1 cup of water (split this to what ever you have on hand)Chopped veggies:smashed garlic x 2, chopped green onion x 2, ? cup chopped bell pepperEnds/little knobs of ginger, chopped (Use a spoon to pile a then cut off)Salt & pepperBefore cooking the meal: Add to rice cooker - brown rice, chicken stock, pepper & drizzle some sesame seed oil. Add extra red bell pepper, green onions & fresh smashed garlic to flavor the rice.In a large re-sealable baggie, combine the ketchup, ginger, soy sauce and garlic on top of the chicken. Seal bag and coat by turning bag around and around. Place in the refrigerator for 15 minutes minimum or up to 12 hours prior. The longer it marinates the better.In a wok or electric skillet on low/medium heat, add half of the canola oil and sesame oil. Two turns of the pan in a light flow from the bottle. Sautee the peppers and celery until crisp. Add the onions half way through the veggie cooking process. Remove from the pan with a slotted spoon when the veggies are done and place in the microwave to keep warm. Cover with Aluminum foil if desired. Add the chicken marinate mix into the warm wok/skillet with the rest of the oils. Cook the chicken completely through then add the veggies back into the pan to warm up.
